Sidi Hassani has spent 15 years in business.
Trained in Raymond Blanc's Le Manoir aux Quat'Saisons by famous chef Reymond Blanc and following training looked after Petit Blanc Cheltenham. Also trained in Paris and has worked in the prestigious Landmark Hotel.
You can also commission Sidi to design and make celebration and wedding cakes and he is also available to cater for your own personal dinner party.
Sidi always had the desire to open his own patisserie and Chez Caroline was born.
At the patisserie you can buy petit fours and a whole range of bread and cakes.
Petit Fours
There are two different categories of petit fours. Petit Fours sec (sec meaning dry) include a variety of small deserts, such as special dainty cookies, baked meringues, macaroons and puff pastries.
Petit Fours glace (glace meaning iced) are iced or decorated in some way ,such as tiny cakes, covered fondant or frosting, small eclairs and tartlets.
They were traditionally made during the cooldown process of brick ovens fired by coal fuel in the 18th century. The name petit four is french for small oven.
